The holidays are finally upon us and I am so excited. I love giving gifts and decorating my tree, but my favorite thing to do is spend time with my family. This time of year, there are so many opportunities to make memories with your family. One of my favorite ways is baking together!
My kids love helping me out in the kitchen, and baking is one of the easiest ways to do that. There usually aren’t any knives involved and while I do need to use the oven, most of the prep is done away from the heat. So now that the air is cooler and our favorite flavors are back in season, we’ve been spending lots of time around the kitchen counter together!
Of course, we make things like cookies, cinnamon rolls, and cake, but sometimes we get together in the kitchen just to make dinner. One of our new favorite recipes starts with one of my favorite versatile ingredients of all time- Pillsbury™ Crescent Rolls- and ends up looking super fancy! The best part? It doesn’t take a lot of work and you can pick up everything you need at Sam’s Club, so you save time twice over.
Pesto Chicken Crescent Ring Recipe
Ingredients:
3 Nature Raised Farms Boneless Skinless Chicken Breasts, Cooked and Chopped into ½ inch pieces
{About 2.5 cups}
1/3 cup plus 2 TBSP Basil Pesto
1 Cup Mozzarella Cheese
½ Cup Shredded Parmesan Cheese
2 Cans {8 oz. each} Pillsbury™ refrigerated crescent dinner rolls
¼ Cup Pine Nuts and 1 TBSP Pine Nuts
Directions:
1. Heat oven to 375°F. In medium bowl, mix cooked chicken, 1/3 cup and 1 TBSP of the pesto, 2 TBSP pine nuts and all the cheese.
2. Unroll both cans of dough and separate into 16 triangles. On an ungreased baking sheet, arrange triangles in ring so short sides of triangles form a 5-inch circle in center. Dough will
overlap. Dough ring should look like the sun.
3. Spoon chicken mixture on the half of each rectangle closest to center of ring.
4. Bring each dough triangle up over filling, tucking dough under bottom layer of dough to secure it. Repeat around ring until entire filling is enclosed (some filling might show a little).
5. Brush remaining 1 tablespoon pesto on top of dough ring. Place pine nuts on top and spray with non-stick spray.
6. Bake 18 to 22 minutes or until dough is golden brown and thoroughly baked. Cool 5 to 10 minutes before cutting into serving slices.
I got the idea for this recipe from the Pillsbury™ website- you can check out the original here. I added the shredded parmesan, swapped mozzarella in place of Monterey Jack, and added the pine nuts and while the original recipe is probably delicious, those small swaps really elevate this dish to the next level. This meal is so good, you could bring it to a holiday potluck or even use it as part of your holiday meal!
