One of my favorite things about the holidays is giving gifts, but one of my least favorite things is trying to come up with gift ideas. With the exception of the kids and one or two other people, I have a hard time coming up with gifts for everyone on my list.
While I’m sometimes forced to go the gift card route, I always prefer to give something from the heart. If I can’t think of anything that can be found at the store for someone, I make them something myself- in my kitchen!
Baked goods are always a great gift idea for the person who is hard to shop for. Whether it’s the family member who has everything {including a sweet tooth} or your child’s teacher, giving something that you baked yourself shows that you cared enough to spend time making something for them.
That said, it’s also a gift that you can make in bulk- it’s cost-efficient and making a few at once makes it time-efficient, too!
I picked up a couple of bags of Gold Medal All-Purpose Flour and Arm & Hammer Baking Soda the other day in the baking aisle at my local Walmart and I’ve already put it to work.
This is our last week of school before the winter break so I’m spending this week in the kitchen making all kinds of treats for Shane’s friends, my friends, and the teachers and staff at Shane’s school.
Of course, we had to kick off our baking marathon with something for our family! I made our favorite Pumpkin Chocolate Chip Bread- with extra chocolate- and it definitely put us in the baking mood.
This recipe is easy to throw together and takes just a little bit of mixing and about an hour in the oven. It’s a great recipe to bring the kids into the kitchen to help with because it is mostly just measuring and mixing- letting you make even more memories with the kids this holiday season!
Ingredients:
-2 cups Gold Medal All Purpose Flour
-1 tsp Arm & Hammer Baking Soda
-1/2 tsp salt
-1 cup sugar
-1/2 cup vegetable oil
-2 eggs
-2 tsp pumpkin pie spice
-1/4 cup water
-1 & 1/4 cups pumpkin puree
-1 & 1/2 cups milk chocolate chips
Directions:
1. Preheat oven to 350.
2. Mix flour, baking soda, pumpkin pie spice and salt together in a medium mixing bowl. Whisk thoroughly and set aside.
3. In a large mixing bowl, combine sugar, oil, pumpkin puree, and eggs. Mix well.
4. Add dry ingredients to the large mixing bowl with the wet ingredients. Mix well, adding up to 1/4 cup of water as needed.
5. Stir in chocolate chips and mix well.
6. Pour batter into a greased loaf pan. Bake for 65 minutes and check for doneness by inserting a toothpick in the middle. When it comes out clean {or at least full of chocolate, not batter}, you’re good!
7. Allow to cool in pan for 15 minutes, then place on a wire cooling rack for about 30 minutes.
