Being on the west coast means that when it comes to entertainment, we’re always either late- or early. When TV shows air, we see them hours after everyone else- so going on social media on season finale nights is a big mistake. However, when something is aired live nationwide {like football!}, it plays here earlier in the day.
Football games play as early as 10am here, which means that sometimes when you get together to watch the game, you just aren’t ready for pizza and wings. But you can’t have football without food- so these Breakfast Bites are the perfect compromise!
Full of cheese, green bell peppers, and- of course- bacon, these breakfast bites are super easy to make. When you make them using the Wilton Perfect Results Mega Mini Muffin Pan, you can actually make 48 of them at a time- perfect for hosting a football viewing party or for bringing to tailgates!
Ingredients:
1 dozen eggs
2 green bell peppers
10 strips bacon
1 cup shredded Mexican blend cheese
Directions:
1. Preheat oven to 425 degrees. Dice bacon and green bell peppers.
2. Crack eggs into a medium sized bowl and whisk thoroughly.
3. Add bacon and bell peppers, mix well.
4. Spray pan with a non-stick spray {the pan is already non-stick but this helps the eggs slide right out!}
5. Pour egg mixture into the muffin pan, filling each cavity almost to the top. {Leave just enough room to top with a little cheese.} Be careful not to overflow!
6. Sprinkle a little shredded cheese onto each cavity. {If there aren’t many peppers or pieces of bacon in a particular bite, the cheese may sink in. That’s totally fine, it’ll still taste cheesy and delicious!
7. Spray with a little non-stick spray to prevent the cheese from burning.
8. Put in the oven for 15-20 minutes. Since they are so small you really want to keep an eye on it, but make sure they are baked and not runny.
9. Remove the pan from the oven but allow bites to cool in the pan for another 15 minutes.
10. Remove from pan and enjoy!
