These days, we’re always headed somewhere. Whether it’s the swimming pool, a play date with friends, or the children’s museum, we are trying to squeeze all of the activities that we want to do all year round into just three short summer months. We’re having a lot of fun but being on the go means that we need to remember to stay fueled up- without spending hours in the kitchen.
This Quinoa Caprese Salad is a very easy lunch solution that I’ve been enjoying lately. I can make a batch on Monday and it lasts me for a few days- or sometimes I send the leftovers to work with Justin. It’s very low fuss and is incredibly refreshing thanks to the fresh, cold ingredients!

Quinoa Caprese Salad
Ingredients:
2 cups cooked quinoa {to cook quinoa, follow package directions or cook 1 cup uncooked quinoa in 1 & 3/4 cup chicken broth}
10 basil leaves, cut into small pieces
1 cup fresh mozzarella, cut into small pieces
1 cup grape tomatoes cut in half or into quarters
Salt & pepper to taste
Directions:
Assemble all ingredients and mix well. Serve immediately or store in an airtight container in the fridge until ready to serve!
