One of my goals for this year is to start eating more vegetables. I actually like a lot of them, I just kind of treat them as an afterthought to a meal instead of something that can actually be a star on the plate.
These roasted carrots though? They’re making it easy to remember to fill my plate with veggies! They take a little while in the oven {about 30-40 minutes}, but the prep time is super minimal and you can have them in the oven while you get the rest of your meal ready! Besides, one bite of them and you’ll know they were worth the wait!
Roasted Carrots
Ingredients:
1 lbs of baby carrots, tops removed and peeled
2 Tbsp olive oil
1 clove garlic, minced
2 Tbsp balsamic vinegar
1 Tbsp honey
Salt & Pepper to taste
Fresh parsley or green onions
Directions:
1. Preheat oven to 400 degrees and line a cookie sheet with foil or parchment paper. In a small bowl, mix oil, vinegar and garlic until combined.
2. Place peeled carrots on cookie sheet, drizzle the oil & vinegar mixture over the carrots, followed by the honey.
3. Coat each carrot with the mixture using your hands- it’s a bit messy, but it’s the best way to do get the carrots evenly coated!
4. Season with salt and pepper.
5. Roast for about 30 or 40 minutes, depending on the size of your carrots and how soft you prefer them. Halfway through the roasting, flip each carrot to help them cook evenly and caramelize.
6. Transfer to a serving platter and dress them up with some fresh herbs and a little more salt & pepper if desired. Enjoy!
