LACTAID was recently on TV when their spokesperson, Melissa d’Arabian, was on the TODAY show making a delicious looking recipe for Chicken with Lactose-free Creamy Mushroom Sauce! Check it out below:

I’m not a bacon person, but if I just omitted that the rest of the recipe looks amazing. When I was growing up, fettuccine alfredo was my all-time absolute favorite food. Unfortunately, when I was in high school, I became lactose intolerant & wasn’t able to eat that creamy sauce anymore. Well, this recipe just shows that you can make anything with LACTAID! I’m going to have to dig up a good fettuccine recipe- after I try this one that is!
I actually do cook with LACTAID all the time- sometimes I make dinners with it {including cream soups & even in shortcut meals like mac & cheese} and sometimes I make simple little dishes, like this 4th of July inspired pudding! I love pudding but having more than a small snack-sized portion can upset my stomach- unless I make it myself using LACTAID!
Ingredients:
Box of vanilla pudding
LACTAID as required per pudding directions {measures cup for cup like regular milk}
Blue & red food coloring
Directions:
Follow package directions to prepare vanilla pudding
Pour into three bowls
Color two of the bowls red & blue, using dye to preference
Layer, so from the bottom up blue, plain & red.
Optionally, top with sprinkles. They almost look like fireworks!
It’s such a simple recipe but such a yummy, refreshing way to enjoy the 4th of July without any lactose sensitivity. Whether it’s you or someone you love who is lactose intolerant, be sure to check out LACTAID!

I thought I was Lactose Intolerant. I had all the symptoms. Most of the time, I was just very careful about my dairy consumption, because the taste of most of those lactose free dairy items are just horrid (especially the chewable tablets!) Then I discovered Organic milks, cheeses and yogurts. Yummy! Plus I could eat more of my favorite dairy items, with less chance of pain and gas.
Of course all that changed when I had to have my gall bladder removed and found out that it was never Lactose Intolerance, but Gall Stones blockage.

That looks so cool! Our daughter has trouble digesting dairy and she generally just uses almond milk but I should check out Lactaid for her.

My favorite recipe using milk is potato soup. I’m not lactose intolerant, but know people that are… I can make this for them. 🙂
