Lucky Charms Cupcakes

Ingredients:
Cake mix
Vegetable oil and eggs (see mix)

1 (1lb) container vanilla frosting
3 Cups Lucky Charms cereal
Green edible glitter (available here
)
Directions:
1. Heat oven to 350°F
(325°F for dark or nonstick pans).

2. Place paper baking cup in each of 24 regular-size muffin cups.
3. Make and bake cake mix as directed on box for 24 cupcakes, using water, oil and eggs.
4. Cool in pans 10 minutes; remove from pans to cooling racks.
5. Cool completely, about 30 minutes.
6. Frost cupcakes with frosting.
7. Top each cupcake with 2 tablespoons cereal; sprinkle with glitter

1/2 cup chopped chocolate-covered mint patties
2 pkg. Jell-O Chocolate Instant Pudding
4 cups cold milk
2 to 4 drops green food coloring
2 cups thawed Cool Whip Whipped Topping
Directions:
1. Combine chopped cookies and mint patties.
2. Beat pudding mixes and milk with whisk 2 min. Let stand 5 min.
3. Meanwhile, stir food coloring into Cool Whip until well blended.
4. Layer half each of the pudding, Cool Whip and cookie mixture evenly in 12 parfait glasses or dessert glasses.
5. Repeat layers.
6. Refrigerate 30 min.

I live in Mexico, where St. Patrick's day isn't celebrated, but I still do, because I want to teach my children about both of their cultures. Anyway…I can never find half of the stuff called for in most St. Patrick's Day recipes, but I do have Lucky Charms!
