Our Chef Boyardee Lunch Date! {&Recipe!}

Shane’s 2 & a half, which means he’s right at the prime age for being a super picky eater. One food that is his favorite on Monday, he ends up hating by Wednesday, so I like to keep it simple & make meals for him that not only the whole family will like {especially when he decides not to eat it & we then have extra leftovers} but also that are easy & fast, so that if he doesn’t like it, I didn’t waste that much time making it. &Of course, I want the food to be at least mostly healthy, too.

Back in August, I found the amazing Chili-Roni recipe, which uses Chef Boyardee’s Beefaroni as well as beans and tomatoes to make a fast, easy & healthy dinner that Shane gobbled down & Justin and I both loved.

When I was asked to host a party this month and make a yummy Chef Boyardee-inspired lunch for my friends, I knew I had to make this one! There were several choices of recipes to make on the Chef Boyardee Recipe Page, but I wanted to go with Chili-Roni again because I loved it so much the first time. So we went to my friend Kathryn’s house {our garage is still being renovated so we’re still lacking a dining room} &had a fun lunchtime play date!

So while the Chili-Roni was cooking, the kids were playing & us Mamas were chatting. Once all the ingredients were in the pan, all I had to do was stir occasionally, so I didn’t miss any of the fun. That makes this a great meal to make on the weeknights too, when you’re talking about your day with your significant other or helping older kids with homework. &It’s ready in just 15 minutes, so it’s easy AND fast.

Chili-Roni

Ingredients

  • 2 cans (15 oz each) Chef Boyardee® Beefaroni®
  • 1 can (14.5 oz each) Hunt's® Fire Roasted Diced Tomatoes, drained
  • 1 can (8 oz each) Hunt's® Tomato Sauce-No Salt Added
  • 1 can (16 oz each) reduced sodium dark red kidney beans, drained, rinsed
  • 1 can (15 oz each) Rosarita® Premium Whole Pinto Beans, drained, rinsed
  • 1 tablespoon Gebhardt® Chili Powder
  • 1/4 teaspoon ground cumin

Directions

  1. Place all ingredients in large saucepan; stir to combine.
  2. Bring to boil over medium-high heat.
  3. Reduce heat, cover and simmer 15 minutes, stirring occasionally.

Overall, the meal was a really big hit. Even my friends who didn’t like Chef Boyardee growing up or make a habit of buying it now really enjoyed the meal & were surprised by how tasty & healthy it was. Kathryn, who hosted, even made the leftovers for her husband that night & he thought that it was yummy, too- even reheated!

Everyone liked the recipe as it was, but also had great ideas for things they’d add in to make it more personalized to their tastes. I personally intend on adding sour cream & cilantro to it the next time that I make it, and my friends had even more great ideas:

-Add Sautéed onions and/or Fritos
-Top with sour cream & shredded cheese
-Add some ground beef or ground turkey
-Add in some taco seasoning & serve with tortilla chips

There are so many possibilities!

Our Philanthropic Playdate for Elmer’s #BagItForward Campaign!

This last week, Shane & I invited some of our friends over for a Playdate for charity that was a lot of fun. Philanthropy has always been very important to me {I was even Philanthropy Chair in my sorority for awhile} and even though Shane’s still young, I really want to start actively involving him in charity work. So when we heard about the Bag It Forward campaign by Elmer’s, it was the perfect opportunity for learning- and for fun!

Bag It Forward is a campaign to provide students, teachers and schools in need with the supplies that they need for a successful school year. While for many, Back to School means sharpened N0. 2 pencils & a brand new backpack, for many others it means showing up without a backpack & borrowing paper from their friends. &With budget cuts for schools pretty much nation-wide, more & more teachers are having to provide their own supplies, without a budget to do so. So Elmer’s started Bag It Forward to encourage those with the means to pick up an extra bag of school supplies to donate to someone in need.

For our Bag It Forward playdate, my plan was simple {the kiddos ARE only 2, after all}: I’d buy some extra school supplies & lay them out, and then the mommies would help their little ones to fill backpacks with school supplies for “big kids”. Below you can check out my ThisMoment, showcasing my shopping experience at Walmart to buy supplies for the playdate!

On Thursday morning, I set up all the school supplies in a way that would make it easy for the two-year-olds to fill the backpacks with them.

In keeping with the School Supplies theme, I put out some of Shane’s crayons & some coloring pages for the kiddos to color on while they waiting for the activity.

When everyone came over, it was lunch time & play time first!

Then it was time to stuff backpacks! All the mommies helped their two year olds to stuff backpacks, making sure each backpack was stuffed with one of everything!

We had a lot of fun &while our kids may be a little too young to fully grasp what they helped us do, it was a great place to start.

While Back to School is starting here in Vegas today, it’s not too late for you to get involved in the Bag It Forward campaign, wherever you live! There are many ways to get involved- most Walmarts have donation boxes at their entrances right now to collect extra school supplies, so next time you go shopping there just pick up some extras & drop them off right there! You can also give supplies directly to a school in your area {this is what I’ll be doing this week with our stuffed backpacks}, or a family you know is struggling. If your kids are in school, send some extra paper, pencils or Elmer’s glue with them to give to a friend who has none, or to give to their teacher to give out as needed. There are many ways to help, so choose which one you can do & do it!

&If you are able to donate, you can upload photos of your donations to the Bag It Forward website!

If you’re unable to donate but still want to help kids in need, all it takes is a “Like” on Facebook- but hurry, time is running out!

From July 25 through Sept. 1, for each “like” on the Elmer’s Facebook page, the company will donate a product to the Foundation’s national network of free stores, where teachers from disadvantaged schools can “shop” for free for school supplies. Products to be donated include a variety of glues, foam board, project supplies and pencil sharpeners. If you already like the page, they’ll make a contribution on your behalf, but you can donate again by watching a video on the Elmer’s Kids In Need Facebook tab and sharing it with your friends and family.

&It doesn’t end there- Elmer’s wants to help YOU as well! Elmer’s is a Upromise partner, and now every time you purchase an Elmer’s or Krazy Glue product with your registered drug or grocery card, a percentage of your purchase will be put into your Upromise account. It’s an Ice Cream Party! {&Recipe!} #FirstStreetIceCream

So, in case you haven’t noticed, it’s Summer. &I live in Vegas. So to say that it’s HOT would be an understatement. So last week, I hosted an ice cream party for some of our friends! It was a lot of fun, and so was setting up for it since I like to be particular about details!

Over the weekend, Hubby, Shane & I headed out to Smart & Final to pick up the ingredients we’d need: appetizers, toppings & of course, ice cream!

I designed these water bottle labels to go with the party theme & wrapped the bottles in them. I was surprised at how easy it was to make them!

I wrapped up some Ice Cream Cone bubbles for everyone to take home with them- this was the ONLY thing for the whole party that I didn’t get at Smart & Final!

I set out a buffet of toppings in baking cups- it took forever but not only did it turn out cute, but it made it easy for everyone to grab what they wanted & just sprinkle it onto their ice cream!

Then it was time to party!

{Yes, I made my friends feed their kids pizza & ice cream for lunch. It happens.}

Everyone helped themselves to whatever toppings they wanted- there were some really creative combinations!

Shane had a chocolate beard but he didn’t let that stop him from hitting on the ladies!

So like I said, there were some really interesting combinations- I never would have thought to mix Heath bar with coconut! I made a S’Mores Sundae and it was so good I just had to share it:

Ingredients:

-First Street Ice Cream: Vanilla or Chocolate
-One Graham Cracker
-First Street Mini-Marshmallows
-Hot Fudge

Directions:

1. Put the graham cracker into a plastic bag and seal it. Use the jar of hot fudge to crush it up into crumbs

2. Put the hot fudge in the microwave

3. Scoop your ice cream

4. Sprinkle the graham cracker crumbs and mini-marshmallows onto the ice cream

5. Use a spoon to drizzle hot fudge on top- and don’t forget to lick the hot fudge off the spoon!

For this party, we used mostly First Street products, which is Smart & Final’s brand. We used First Street sprinkles, syrups, toppings, and even ice cream! Nothing tasted “cheap” – even though it definitely was!
