The Cost of Celebrations

The “major” holidays may be behind us, but celebrations continue all year long. Valentine’s Day was just last week, and while we decided not to do anything due to our wedding being next month, my Facebook stream was full of pictures of flowers, teddy bears & date nights for a solid 48 hours. Next up is Easter, where each kiddo gets an Easter Basket {plus there are eggs to dye & lots of Cadbury Mini Eggs to eat}, then Mother’s & Father’s Day, including a gift for each. Sprinkle in some birthdays & you’ll notice that you may spend more on celebrations than you think!

Baines & Ernst recently made an infographic sharing some fascinating facts about the most popular Spring & Summer holidays- did you know that 30 million people sent cards on Mother’s Day, but only 7 million sent Father’s Day cards? Or that Hallmark makes 1,300 cards just for Valentine’s Day??

The Cost of Celebrations can sometimes deter you from celebrating at all, but keep in mind that it’s the thought that counts. Instead of sending your Mother a giant bouquet of flowers, take her on a coffee date at Starbucks. Instead of buying yet another tie for your husband from the kids for Father’s Day, send them out front & have them wash his car, or have them draw him their own cards rather than buying them for $5 each. {Justin throws away every card he receives anyway!} This year, don’t let the cost of celebrations keep you from enjoying your loved ones!

Our Elf on the Shelf Goodbye Party

This year, we had a little friend come to visit us. The Sunday after Thanksgiving, Santa sent us our own elf straight from the North Pole! He brought us a special North Pole Breakfast full of cookies & candy & cinnamon rolls and while Shane was skeptical at first- having never seen North Pole magic in action before- he figured anything that brings him that much sugar can’t be bad.

Shane named his elf “That Guy in the Red Costume” {yep.} and by the next day, Shane was obsessed. He was telling everyone about his elf- his grandma, Justin & me, and even the checkout lady at the grocery store. Every night he was asking me to tell him the story of his elf & every morning, he would practically leap out of bed to find his new hiding spot. So the week before Christmas, I realized how hard it would be on Shane when “Red” left us on Christmas Eve to go back with Santa.

Then it hit me: Red had thrown a party for us when he arrived- we could throw a party for him before he left! We decided to have a Goodbye Party for Red on December 23rd, so that he’d know that we were going to miss him & that we loved having him with us all month. It was easy deciding what kind of party to have- since elves only eat sugary foods, we decided to throw an ice cream party!

The ice cream idea actually came to me when I saw the adorable new ice cream cakes from Baskin-Robbins. Available in Santa, Elf & Snowman varieties, they looked like the perfect way to say goodbye to our friend. I had originally planned on getting an elf cake {after all, it was in honor of an elf} but when we got to the store, Shane wanted a Santa cake instead. It worked out though because the Santa cake that was pre-made was exactly the flavors that I had wanted: white cake with cookies & cream ice cream! Yum! {You can also call ahead to order yours & if you do that, you can customize your cake and ice cream flavors.}

While we were at Baskin-Robbins, we also picked up a couple of extras. They had a really cute Christmas tree ice cream cone that Shane wanted really bad- I wanted to get one for each of us but apparently someone else was having a party that night because they were completely wiped out of all of their extra Christmas novelties except for the one tree!

Instead, we got ice cream cake bites, which had four different flavors so that we could each have a bite of each one. The bites came in Praline Caramel, Double Chocolate, Chocolate Mint & Red Velvet.

After letting our Santa cake thaw out on the counter for about 15 minutes, it was time for our party! I put the cake on the table {where Red had appeared holding a pretend ice cream cone that morning, apparently in on our plans} along with the other treats & we read the Elf on the Shelf book again, just as we had at the North Pole Breakfast. We talked about our favorite hiding spots that Red had been discovered in as well as how much we’d miss him. We thanked him for giving our messages to Santa for us &for coming to stay with us.

&Then we ate the ice cream! Everything was good- well, at least the cake bites &ice cream cake… Shane didn’t exactly share the tree.

But seriously, the cake was just as amazing as I remembered ice cream cake being when I was a kid. Every year for my birthday, I used to ask for ice cream cakes & to this day I remember exactly what several of them looked & tasted like. They were always so magical to me- I mean, it’s ice cream in a cake. It was fun sharing something from my childhood with Shane.

Guest Post: Have A Spooktactular Halloween

Throwing a Halloween party for kids can be loads of fun! But you have to make sure it is pretty well organised, children can be lot more discerning than you think and they are a lot quicker and more vocal than adults when it comes to complaining! Remember, you don’t have to go it alone, there will be a lot of happy parents in the neighbourhood when they hear you are providing an alternative to their children being outside on a cold dark night, so don’t be shy to enroll some help!

Other than a lot of help, here are some of the things integral to your perfect spooky soiree!

Invitations – Any kids party is much better organised when you have invitations made. The RSVP will give you a good idea of numbers and further information about the guests such as special dietary requirements etc. Handmade invites are always so much better and can be a great activity for you and your children, not to mention save you money!

Costume – Obviously it should be a fancy dress party with but don’t forget, you have to dress up yourself, as well as having to sort Halloween costumes for your little monsters! You can have loads of fun when it comes to fancy dress costumes even hand out prizes for the best dressed.

Games – You need to keep the party regimented so make sure you have a time table in your head for activities. Some great ideas for games include, a spooky scavenger hunt, bobbing for apples, pin the broomstick on the witch or a homemade Halloween piñata.

Food – Spooky themed food is always much more fun than normal food on Halloween and, if you are clever about it, you can dress up a lot of healthy snacks as something a lot more interesting to children!

Our ConAgra Backyard Bash!

Do you know where your food comes from? I usually don’t, but I definitely wish I did! It’s important to me that my food is healthy, but where it comes from contributes to how good it is for you, too. It’s actually a goal of mine to become more informed about our food, especially since it’s going into Shane’s little belly, too.

ConAgra, the company behind many household brands {like Chef Boyardee, Egg Beaters & Hunt’s} wants you to know where their food comes from:

This last weekend, Justin & I hosted our families for a Memorial Day Backyard Bash! {We ate inside, though, since we have a lot of flying things in our yard but it was a blast anyway!}

Tomato Planting

Since our dinner was pretty late, while we were waiting for everyone to arrive, we planted some tomato seeds! {We were supposed to plant them in a Hunt’s can but I accidentally threw them away without thinking about it. Luckily, we had an extra pot!} Shane helped me plant some herbs a couple of months ago & those didn’t turn out so well, but I have high hopes for these since they thrive in lots of sunlight!

I made a recipe from each of the three brands featured- Chef Boyardee, Hunt’s & Egg Beaters. The Egg Beaters recipe {Chocolate Chip Cookies} didn’t turn out right but that was totally on me, not the recipe. Everyone LOVED the Minestrone Salad and the Memphis Style Mac & Cheese!

Minestrone Pasta Salad

Ingredients

  • 1-1/2 cups dry medium shells or mini penne pasta, uncooked
  • 1 can (16 oz each) dark red kidney beans, drained, rinsed
  • 1 can (14.5 oz each) Hunt's® Diced Tomatoes with Basil, Garlic and Oregano, drained
  • 1 cup quartered and sliced zucchini
  • 1/2 cup sliced baby carrots
  • 1/2 cup light Italian dressing
  • 1/4 teaspoon ground black pepper
  • 1/4 cup shredded Parmesan cheese

Directions

  1. Cook pasta according to package directions, omitting salt. Drain; rinse with cold water until cool.
  2. Meanwhile, place beans, drained tomatoes, zucchini and carrots in large bowl. Add dressing and pepper; toss together.
  3. Add cooled pasta to vegetable mixture; toss together. Sprinkle with cheese just before serving.

Memphis BBQ Mac and Cheese Sandwiches

Memphis Style Mac and Cheese Sandwiches

Ingredients

  • 1-1/4 cups rotisserie chicken or cooked pork, shredded
  • 1/4 cup prepared barbecue sauce
  • 8 slices country-style white or sourdough bread
  • 1 can (15 oz each) Chef Boyardee® Mac & Cheese
  • 1/4 cup butter, softened

Directions

  1. Combine chicken and barbecue sauce in small bowl. Layer chicken evenly over 4 bread slices. Cover with an even layer of Mac & Cheese. Top with remaining bread slices; press together gently. Lightly spread outside of both sides of sandwiches with butter.
  2. Preheat nonstick griddle or large skillet over medium heat. Cook sandwiches about 3 minutes per side or until golden brown. Cut sandwiches in half and serve with additional barbecue sauce for dipping, if desired.

Chocolate Chip Cookies

Ingredients

  • 2-1/2 cups Ultragrain® All Purpose Flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup Fleischmann's® Original-stick, softened
  • 3/4 cup packed light brown sugar
  • 3/4 cup granulated sugar
  • 1/4 cup Egg Beaters® 100% Liquid Egg Whites
  • 1-1/2 teaspoons vanilla extract
  • 3/4 cup semi-sweet chocolate morsels

Directions

  1. Preheat oven 375°F. Mix flour, baking soda and salt until well blended; set aside.
  2. Beat Fleischmann's and sugars in large bowl with electric mixer on medium speed until light and fluffy. Add Egg Beaters and vanilla; mix well. Gradually add flour mixture, beating until well blended after each addition. Stir in chocolate chips.
  3. Drop by rounded tablespoons of dough, 3 inches apart, onto ungreased baking sheets.
  4. Bake 12 minutes, or until lightly browned. Cool on baking sheets 2 minutes. Remove to wire racks. Cool completely. Store in airtight container at room temperature.

Our Backyard Bash was such a blast that we totally forgot to do our time capsule activity! We are going to have each member of the family select one item to put into a time capsule & in five years, we’ll open it and reminisce! We aren’t going to be burying ours since we won’t live in this house in five years, but we are going to keep in locked up in the back of the closet so that no one peeks! Since I already forgot to do this at our party, I think I’m going to wait until July when my sister comes to town & ask her and her kids to participate as well!

We had a lot of fun celebrating together and I felt good serving foods that I trust & that I now know where they came from. &The recipes were such a hit, they’re sure to become staples around here!

4 Tips for Spicing Up Your Party

I love hosting parties. I wish I had more chances to have them because I have SO much fun planning them: everything from the theme, to the  food, to the décor, and the activities! It’s been 7 months but I’m still proud of how Shane’s birthday party turned out, and I’m already dreaming of his 3rd birthday party!

I’m no expert, but I do have a few tips to easily spice up a party:

Details, details, details! For Shane’s 2nd birthday party, we went light on the décor, but I added in a few small details to make an impression, such as creating my own themed water bottle labels to go with the “Down on the Farm” theme.

Never underestimate your dishes. For the same party, I bought cheap melamine plates from Target that matched the party’s theme, and used mason jars to serve lemonade. Lemonade is always yummy- but it’s fun when you serve it in a mason jar with a matching straw & fresh sliced fruits inside!

Keep It Simple. There’s a bit more wiggle room here with older kids, but when you’re dealing with younger kids {like I have been so far}, keep it simple. At Shane’s birthday, I knew the other kids {ages 5-25 months} would be too young for a “group activity”, so I just printed out some cute farm-themed coloring pages, laid them out with some crayons, & let the kiddos have at it!

Serve yummy food. This seems like a no-brainer but I’ve been to parties that didn’t follow this cardinal rule: serve good food, and lots of it! Keep in mind that party day will be crazy enough, so pre-make anything you can & for the remainder, use quick & easy snacks like the new Farm Rich Queso Cheese Bites- a whole bag is out of the oven in just 8-9 minutes!
