We’re just a few short weeks away from going back to school, and that means busy weeknights are just around the corner! In fact, our busy schedules have already begun as we try to balance getting ready for a new school year and trying to get the most out of the rest of summer break.
One of the main ways I try to save time- and my sanity- during the school year is by having a supply of quick meals on hand for weeknights where I just don’t have time to cook from scratch. Sometimes that means rice that heats up quickly in the microwave instead of taking 25 minutes on the stovetop, sometimes that means buying pasta sauce instead of making it, and sometimes that means making an entire entree in the microwave in five minutes.
It’s not enough for food to be quick to make- it has to taste good, too. That said, I like making sure that the frozen meals we buy have good ingredients. Things like real proteins, lots of veggies, and other quality ingredients are a must for dinners around here. We just discovered the Tai Pei Asian inspired single-serve frozen meals and they’ve quickly become a go-to meal for those really busy nights- and sometimes, even for lunch! They contain great ingredients like large pieces of broccoli and peppers and delicious chicken and they even have infused rice for some delicious, bold flavors.
These meals are great because they’re something that I can eat quickly while getting work done during Zac’s nap or that Justin can bring to the office. I love that they’re single-serve because they let us each pick whichever flavor we’re feeling that day, even if that’s a different flavor for each of us. It also means less dishes for me because I don’t have to put it on a plate- we can just eat out of the containers as if we ordered from our favorite restaurant! And of course since I just have to heat-and-eat, I don’t have a sink full of pots and pans and everything else I would need to cook the same dinner on my own.
There are several varieties to choose from- my favorite is General Tso’s Spicy Chicken and Justin is partial to the Beef & Broccoli. That said, we’ve all liked all of the ones we’ve tried! Even Zac couldn’t get enough of the rice from our meals- every time we made one he asked for all the rice! Now if only I could get him to eat the broccoli, too…
