One of my favorite fruits- yes, fruits- is avocado. For a long time I was actually allergic to it, but luckily I finally grew out of that allergy and I’ve been making up for lost time! I love to add avocado to all kinds of things- and I love adding tings to my avocados!
These Baked Avocados are a delicious way to eat one of the most delicious sources of healthy fats. You can make them with or without the bacon- I personally prefer it without but Justin is all about the ones with bacon! These makes for a great side dish or mid-day snack and they don’t take long to make, which is essential when you’re hitting that mid-day slump.
Baked Avocados
Ingredients:
3 avocados
½ lb. bacon, cooked and cut into small pieces.
6 oz. cheddar cheese, shredded
½ C. green onion, chopped
1 tsp. onion powder
1 tsp. garlic powder
salt & pepper to taste
Directions:
1. Preheat the oven to 350 degrees. Line a baking sheet with foil or spray with non-stick spray.
2. Rinse the avocados and dry. Cut each avocado in ½ and take the pit out of the center. Gently scoop out the avocado from each shell making sure to keep the shell intact.
3. Place the avocado in a medium size bowl or mortar and pestle and mash down with a fork or a potato masher.
4. Combine the green onion, garlic powder, onion powder, shredded cheese, salt, and pepper with the mashed avocados and stir well.
5. Using a large tablespoon, scoop the avocado mixture back into the avocado shells and place on the baking sheet.
6. Bake for 10-15 minutes. Serves 6 {each ½ avocado is 1 serving}. Enjoy!
Have leftovers? Store in an airtight container 1-2 days in the fridge. But they’re avocados, so your mileage may vary.
