Every year for my birthday, my mom would ask me what I wanted for dinner. Almost every year, I chose the same thing- Barber Foods Chicken Kiev. It has always been one of my favorite foods and nothing has changed- I still make it for my own family regularly! The moist chicken breast covered in crunchy seasoned breading and filled with butter and seasonings is just such a great combination of flavors.
I had heard that Barber Foods recently changed their packaging to go along with a new recipe, so I just had to try the new version to see how it stacked up to my childhood favorite! I picked up a box at my local store {along with a box of the Broccoli & Cheese variety, which I know is a favorite of my husband’s} and brought it home to make it for dinner!
I was pleasantly surprised- while I know it’s good {it is my favorite, after all} it was even better than I remembered! The new recipe is definitely a hit in our home. The breading was even crispier than before and the seasonings were spot-on!
I might be biased because it’s one of my favorites, but Barber Foods Chicken Kiev really goes with anything. I serve it with vegetables, rice, pasta, fruit- really, it’s a perfect pairing no matter what you choose. This particular time, however, I paired it with one of my favorite healthy sides- cauliflower rice!
You can make cauliflower rice all different ways, but this particular recipe really brings out the flavors in the Chicken Kiev- and it’s easy to make!
Ingredients:
2 tbsp Olive oil
2-3 cups Califlower florets
2 tbsp Diced onion
1/4 cup Chicken broth
1/2 tsp Garlic powder
1/4 tsp Onion Powder
1/2 tsp Parsley flakes
Directions:
1. Place olive oil in skillet on low until warmed up. Sauté diced onions for about 2 minutes.
2. In the meantime, place the cauliflower florets into a food processor and pulse until crumbly. It should kind of resemble couscous in texture. Don’t pulse too much- go nice and slow until you have the right texture. Tip: If your florets are starting to get really small but you still have large chunks, just remove the large chunks {carefully} and have a second go-round. Sometimes they get wedged in the food processor & need to be shaken loose!
3. Put the cauliflower into the skillet and sauté, stirring often to prevent burning. After about a minute, stir in chicken broth and simmer for about two minutes to allow the cauliflower rice to soak in some of the flavor.
4. Turn off heat, sprinkle with seasonings, stir, and enjoy!
I love this meal combination because it’s an easy meal solution for even the busiest of weeknights. It doesn’t require a lot of preparation, which allows me to spend more time with my family. All I have to do is put the chicken in the oven {make sure to follow all the directions on the box and cook your chicken to an internal temperature of 165 degrees!}, make my rice while it’s cooking and then plate and enjoy! It’s also a food that the whole family enjoys, so I don’t have to worry about making multiple dinners- saving me time, food, and some of my sanity.

YUM!! What an easy weeknight meal! We only have one grocery store and they no longer carry Barber Foods products. I was so bummed to learn that I can no longer have these yummy (and easy to make) foods.
