With St. Patrick’s Day just days away, it seems like everything’s turning green! This salad dressing recipe is good any time of year, though.
One of the the keys to healthier eating is to make sure what you prepare is full of flavor so you don’t feel deprived, and therefore “cheat” on whatever eating plan you are following. Another key to success is to get enough healthy fats!
Avocado often gets a bad rap for being a high fat food {85% of the calories come from fat} but it is a super healthy fat and should be included in your diet in various ways. It makes a delicious ranch-like dressing when combined with Greek yogurt and other seasonings like parsley and dill. It’s great for topping salads or as a dip for other vegetables.
Ingredients:
1 ripe avocado
1 cup Greek yogurt
¼ milk
1 tsp. parsley
1 ½ tsp. dill
1 clove garlic, crushed
2 tsp. lemon juice
2 tsp. olive oil
½ tsp. black pepper
Directions:
Place all ingredients in a food processor and run until it is smooth and creamy.
Store in a glass container in the refrigerator for 7-10 days.
This recipe fits in a half pint mason jar with just a bit to spare {just enough for your first salad}.
