SunChips Chicken Enchilada Soup Recipe

One of my favorite treats as a kid was SunChips. I remember that when we’d go to the grocery store, if my mom gave me the choice of a treat I would always pick “Green SunChips” {French Onion}. &While my favorite flavor has changed to Harvest Cheddar, I still absolutely love them & consider them my favorite chips. Even Justin knows to get them for me whenever he picks up sandwiches or wraps at restaurants!

For as many times as I’ve enjoyed SunChips, I’ve never actually thought to include them as a part of a recipe. I’ve used them to scoop up dips, but never as an actual ingredient! SunChips sent me a couple of recipes that I want to try, including this yummy looking Chicken Enchilada Soup:

SunChips Chicken Enchilada Soup Recipe


  • 1/4 cup butter
  • 1/4 cup flour
  • 1 cup chicken broth
  • 1 cup SunChips Harvest Cheddar Flavored Multigrain Snacks, finely crushed
  • 1- 1.25 oz. package taco seasoning
  • 1- 15 oz. jar Tostitos All Natural Chunky Salsa
  • 1 quart whole milk
  • 2 cups pre-cooked chicken, 1/2” diced
  • Recommended garnishes: avocado, cilantro, sour cream


  1. In a medium pot, cook butter and flour over low heat for 7 minutes. Add taco seasoning and cook for an additional 2 minutes.
  2. In a blender, add Tostitos All Natural Chunky Salsa, SunChips Harvest Cheddar Flavored Multigrain Snacks, chicken broth and puree until smooth
  3. Pour pureed mixture and milk into pot and add chicken. Cook over medium heat for 5-7 minutes until it reaches a simmer. Stir occasionally.
  4. Garnish with avocado, cilantro, and/or sour cream. Serves 4-6.

I love chicken, enchiladas, and of course SunChips so I can’t wait to try that!
