Our Date Night at Home with Campbell’s Skillet Sauces! {& Easy Weeknight Meal!}

Since having Shane, Justin & I don’t get a lot of date nights. We don’t have any real babysitters, and now that Justin’s mom has been working on Saturdays we don’t like to bother her to watch him. &Since Justin works at 4am, meaning him and Shane both have an 8pm bedtime, we don’t get to hang out at night, either. So we have gotten creative & started having “family date nights”- we’ll watch a movie, or get some froyo, or do something else fun that’s kind of like a date night but includes our little man, too.

I love our family date nights, but sometimes, we really do need some “us” time. So since Justin’s mom had the day off today & Justin got home from work especially early, we let Shane have some quality time with his Grandma and Grandpa &we had a “date day”- at home!

Easy Weeknight Meal - Campbell's Skillet Sauces

I had planned ahead & decided to make a delicious lunch using Campbell’s Skillet Sauces. I went to Albertson’s to check them out &they had a ton of flavors {&I bought one of each thanks to Shane wanting one of every color- you can catch all the other ways Shane “helped” me grocery shop in my G+ album} but for this meal I chose the Toasted Sesame. The other varieties include Creamy Chipotle, Fire Roasted Tomato, Marsala, Scampi, and Thai Green Curry.

It took me a minute to find the sauces because there were SO many other Campbell’s products- I didn’t realize how many they make! I finally located them by the sauces & seasonings, though. {Bonus: many stores currently have coupons near the item on the shelves- although you can also grab one on Facebook- and some even have special savings on Sanderson Farms Chicken as well. My store didn’t have the coupons- and they don’t carry that chicken- so your results may vary.}

The Skillet Sauces are so easy- each variety suggests a meat to pair it with, and has simple directions {I’m talking three easy steps} to get your meal started! You can leave your meal as is or add extras- I chose to serve this chicken on a bed of white rice and added in some yellow & red bell peppers for some extra nutrition. It was a super easy meal to prepare & so yummy, too!

Toasted Sesame Chicken

Easy Weeknight Toasted Sesame Chicken

  • 1 tbsp vegetable oil
  • 1 pound boneless, skinless chicken breast cut into strips
  • 1 pouch Campbell’s Skillet Sauces- Toasted Sesame
  • 1 cup instant white rice
  • 1 cup water
  • 1 tbsp olive oil
  • 1 yellow bell pepper, cut into strips
  • 1 red bell pepper, cut into strips

  1. Heat vegetable oil in a large skillet over medium-high heat.
  2. Add chicken and cook until browned.
  3. Add Campbell’s Skillet Sauce and heat until boiling.
  4. Turn heat down to low and simmer for five minutes or until chicken is done.
  5. Meanwhile, heat olive oil in another skillet & add bell peppers.
  6. Sautee until peppers soften, about 3-4 minutes, stirring frequently.
  7. Prepare white rice as directed on box.
  8. Serve chicken and peppers together on a bed of white rice.

Since the meal was so fast & easy to prepare, I had plenty of time left over to watch a movie before picking Shane back up. There are always movies that we want to watch but can’t because we know there will be language that’s inappropriate for Shane so this was the perfect chance!

If you want to spice things up & have a date night at home {a perfect idea for Valentine’s Day since it’s on a Thursday this year- not exactly a great night to go out} or just need a quick meal solution, be sure to check out Campbell’s Skillet Sauces!
