My Weight Loss Secret Weapon: #FrozenFavorites!

I like to cook. I do it almost every night for the whole family {although Shane hardly ever makes what I eat} and I enjoy it. It gives me the flexibility to use healthier ingredients whenever possible & I can figure out the exact nutrition information for my food. That said, I don’t like cooking three meals a day, and I rely on convenience foods to get me through until dinner. Why? Because I know myself, and I know that if it’s a choice between cook something for lunch or go pick something else up, something likely to be much less healthy, then well, I’m going for picking something up.


That’s why Lean Cuisine meals are my absolute go-to. They taste so good I feel like I went out to lunch {they don’t taste good “for a frozen meal”- they just genuinely taste good}, and they are easy to make so I know that they’ll be ready in just moments. I have a tendency to go from not hungry to STARVING in just a few minutes, so it’s nice to know that I can have a delicious, warm meal ready for me in about five minutes.

And the best part? This delicious food is SO low in calories! Not only can I enjoy the meal, but I even have room left in my calorie budget for a side dish and some ice cream! I know, ice cream isn’t exactly “diet” food, but when it’s a Skinny Cow cookies & cream ice cream sandwich, it is. It’s also low in calories, tastes like a full-calorie ice cream sandwich, and is the perfect mid-day {or night time!} reward for making great food choices all day.

Lean Cuisine and Broccoli Stir Fry

I made a side dish to go along with one of my Lean Cuisine meals the other day & it was so easy and good that I had to share it with you! It only takes about 5 minutes to make, so about the same amount of time that the Lean Cuisine meals microwave for. &You can cook a bigger batch and save some in the fridge to warm up later.

Broccoli Cashew & Almond Stir Fry Recipe

Broccoli Cashew & Almond Stir-fry


  • 4 cups broccoli florets
  • ½ tsp minced garlic
  • ¼ cup cashews
  • ¼ cup almonds
  • 2 tbsp olive oil or enough to coat pan


  1. In a large pan, heat the olive oil for about thirty seconds.
  2. Add broccoli and cook, stirring frequently, for 2 minutes
  3. Add minced garlic and continue to cook, stirring, for 2 more minutes
  4. Remove from heat and toss in cashews and almonds.
  5. Serve.

  7. I love frozen foods also. It helps me save money on lunches when I am at work and they have some really delicious low calorie desserts now too! I haven’t tried Lean Cuisine, but some of those look great.
