What color comes to mind when you think of Halloween? Orange? Black? What about green? Green is a great color to use on Halloween as it is the color of the stereotypical witch’s skin. It’s also the color of avocado, which makes a great addition to any party spread! Right now, Avocados from Mexico is running a Pin to Win contest where you can win a $100 gift card just for making a Pinterest board featuring your favorite Halloween recipes from their site! They have so many great ones to choose from but one of my favorites is the Spookamole with Corn!

Ingredients: 2 fully ripened Mexican avocados, halved, pitted peeled and diced 1 cup peeled, seeded and diced tomatoes 1/2 cup corn kernels, fresh or thawed 1/2 cup chopped onion 1-1/2 tablespoons chopped cilantro 1 serrano or jalapeño chili, stemmed, seeded and minced (optional) 1 tablespoon fresh lemon juice 3/4 teaspoon salt 1/4 teaspoon ground black pepper Preparation: In a medium bowl, gently mash avocados with a fork until chunky-smooth. Combine tomato, onion, cilantro, lemon juice, salt and pepper. Toss gently. Serve with blue corn chips or vegetable sticks (carrot or celery), if desired. I personally prefer Florida Avocados, they’re like butter! Seriously. So smooth but I love avocados in general. Will have to try these when I next shop for some.
