Recipe: Strawberry Banana Parfait

Growing up, I used to have dessert every night. Sometimes it was candy, other times ice cream, but in either case I looked forward to it all day long.

Now that I’m older, I can’t really do that anymore. I enjoy those foods on occasion, but I could never have them as an everyday thing. But, I still look forward to a treat at the end of a long day, and so I’ve been thinking of ways to satisfy my sweet tooth without ruining an entire day of watching what I eat.

My current favorite dessert is a strawberry-banana parfait, sprinkled with a few graham cracker crumbs & topped with a dollop of COOL WHIP Whipped Topping! It’s cold & sweet like ice cream but without all of the empty calories!

Strawberry Banana Parfait

Ingredients

  • 6 oz. Low-Fat Yogurt {I used Strawberry}
  • 4-6 Strawberries, quartered
  • 1 medium Banana, sliced
  • 1/2 sheet Graham Cracker
  • COOL WHIP Whipped Topping

Directions

  1. Layer your glass or bowl with 3 oz. of the Low-Fat Yogurt
  2. Top with half of the Strawberries and half of the Banana
  3. Add the rest of the Yogurt, then top again with the remaining fruit
  4. Crush up your Graham Cracker {do this mess-free by placing in a sealed baggie before breaking apart} and sprinkle over the top of the fruit
  5. Top with a dollop of COOL WHIP and then sprinkle on a few more graham cracker crumbs
  6. Enjoy!

Until a few months ago, I had never tried COOL WHIP with fruit. I enjoyed it with regular desserts like pie, but I just never thought to try it. &Now that I have, I’ve been enjoying it often! It’s SUCH a good combination- I have tried it with both strawberries & bananas {both in the recipe and stand-alone} and it tastes great with both. I can’t wait to try it with other fruits!

The COOL WHIP really just takes the parfait a step above- taking it from a cup of fruit to an everyday dessert that we can enjoy! I love that I can still enjoy a sweet treat- every day if I want to- and I don’t have to feel bad about it. Shane even likes both the parfait & the fruit dipped in COOL WHIP and so I’ve been using that as his dessert, too!

  2. Oh, I love, love, LOVE Cool Whip! My favorite way to have it is so strange: I freeze the sugar-free stuff and eat it in place of ice cream, straight from the bowl. It’s low calorie, and satisfies that craving I get for creamy sweets now and then. Yum!
