Recipe: Cowboy Quesadillas

Since I’ve been dieting lately, I’ve been having to make three meals quite often: one for me, one for Shane, & one for Justin. I have been eating my Nutrisystem dinners, and Shane usually just wants PB&J, but I’ve still been cooking for Justin.

There’s a problem though: Since Justin is the only one eating his meal, there’s always leftovers. I’ve been trying to make foods that keep well & make for good leftovers the next day, both so that we aren’t wasting food and so I only have to cook him a meal every few days instead of every single night.

Cowboy Quesadillas


  • 1/2 lb. (8 oz.) VELVEETA®, cut into 1/2-inch cubes
  • 1 can (10 oz.) RO*TEL® Diced Tomatoes & Green Chilies, drained
  • 4 cups shredded cooked chicken
  • 4 green onions, thinly sliced
  • 6 10-inch flour tortillas


  1. Combine VELVEETA® and RO*TEL® in 1-1/2-qt. microwaveable bowl.
  2. Microwave on HIGH 3 minutes or until VELVEETA® is completely melted and mixture is well blended, stirring after 2 minutes.
  3. Stir in chicken and onions.
  4. Spray large nonstick skillet with cooking spray and heat on medium-high heat.
  5. Spoon about 2/3 cup chicken mixture onto half of 1 tortilla; fold in half.
  6. Add to skillet; cook 1 minute on each side or until golden brown on both sides. Remove from skillet.
  7. Repeat with remaining tortillas and filling.
  8. Cut into wedges.
