Week Two Weigh-In {&Recipe!} #NSNation

Well, I’m two weeks into my Nutrisystem plan now, so it’s time for another update! This week was a whole lot easier as far as sticking to the program, for two reasons:

1.) I’m getting way more used to it now & it’s becoming much easier to make better choices.

2.) I found the recipe section of the Nutrisystem community website, so I was able to make some great Nutrisystem approved meals for my whole family! The Nutrisystem pre-made foods are delish, so it’s not that I don’t want to eat them- I just miss cooking. So being able to cook occasionally has really helped me adjust more!

In fact, one of the recipes I made this week was deemed by Justin as a “new favorite”. I get the feeling it’s going to become a staple in our home! I’m including it below so that you can try it too, whether you’re on Nutrisystem or not!

Turkey Burger with Onion-Apple Relish

Yield: 4 servings

Ingredients

  • Calorie-free pan spray, as needed
  • 4, 4 oz. turkey burgers, extra lean variety
  • 1 medium onion
  • 1 medium red bell pepper, julienne slices
  • 1 medium apple, peeled, cut into quarters
  • 1 Tbsp. apple sauce (unsweetened)
  • 1/4 tsp. cumin, ground
  • 1/4 tsp. black pepper, as desired
  • Lettuce, as desired
  • Tomatoes, sliced
  • 4 each burger buns, whole grain

Directions

  1. Heat grill or broiler.
  2. Spray onions, peppers and apples with pan spray, place on grill or under a broiler and cook until all pieces are slightly charred and beginning to soften.
  3. Cool vegetables and apples slightly, then mince all grilled items and place in a small bowl.
  4. Add apple sauce, cumin and pepper to bowl and toss to blend. Allow to stand covered while you prepare your burgers.
  5. Prepare turkey burgers on grill or under broiler. Place burgers on a bun and spread a portion of the onion-apple relish over each burger. Top with tomato slices and lettuce if desired.

As far as my weigh-in this week, I lost another 2 pounds!

Weight lost this week: 2 lbs.
Weight lost total: 3.5 lbs.

The most challenging thing this coming week will be the fact that I’m going on an overnight trip to meet the people behind Toyota- which includes 2 dinners, a breakfast and a lunch as a group. So while I’ll have to take a 24 hour break from Nutrisystem, I plan on sticking to it up until the trip and immediately after I get home, and I intend on making good choices during those “off” meals. Wish me luck!

    It is nice they have recipes, I didn’t realize that. I like to cook, I don’t think I could go weeks just using premade food.
