Recipe: Easy Microwave Mexican Pizza

I like to make new foods all the time, but Shane’s a very picky eater. There are only four things he’ll eat: ham, chicken fingers, quesadillas & pizza. I’m getting really sick of plain cheese pizza, but since I don’t eat most meat, my options are limited. But using the massive stockpile of tortillas we have thanks to Shane’s love of quesadillas, I came up with a super easy microwaveable pizza option that I can have instead! Whether I make it instead of the pork-loaded pizza Justin & Shane prefer or as a quick lunch to pre-make & bring to work, it’s a great choice because it only takes 5 minutes, 3 ingredients & a microwave!

Easy Microwave Mexican Pizza

Ingredients:

-Soft Taco Sized Flour Tortilla
-About 1/10 of a block of VELVEETA®, shredded {Yes, shredded!}
-1/3 Can Ro*Tel®
-Optional: Feel free to experiment with toppings: sour cream, jalapenos, hot sauce, etc.

Directions:

-Shred the VELVEETA® and sprinkle evenly over tortilla
-Top with Ro*Tel®
-Microwave for 45 seconds
-Top with additional toppings, if desired.

That’s it! It’s seriously that easy- the only time consuming part is shredding the cheese which only takes about 2-3 minutes.

A Visit from {Secret} Santa! #jcpSecretSanta

Well, Christmas is officially over, and I hope yours was terrific! Ours was amazing, &I’ll share more about it later in the week. But right now I want to thank my Secret Santa!

Last week I told you all about jcpenney’s Santa Tags and how neat they were to stick them on a gift to personalize it. I also said that I was able to choose a gift to send to the blogger than I was assigned for a Secret Santa exchange & that I was eagerly awaiting my own gift- and that gift finally came!

It was so fun to get an early Christmas gift- and it was nice because I got to have it displayed on Christmas when my family came over. It’s beautiful & fits perfectly on the ledge between the dining & living rooms- so it’s always on display!

Window Shopping

So since Christmas was yesterday {in case you didn’t notice}, I’ve gotten asked three times today if I got a certain gift. What gift? An engagement ring.

See, Justin & I are engaged. &We have been since June 2008. But we got engaged in a non-traditional way. We were just kind of talking about our future plans & it just kind of came up. It wasn’t a grand gesture, but that’s not really who we are. &It was/is still a legitimate engagement.

Justin had been thinking about still doing a big “proposal”, despite the fact that we were already engaged, but we ended up finding out we were expecting before he ever got to it. &Babies are expensive. So while we’ve been engaged for over 3 years, he still hasn’t, in the wise words of Beyonce, “put a ring on it.”

Sorry to disappoint, but no, I did not get a ring for Christmas. I’m not really disappointed though. While it would be nice to have one, it’s not a huge priority at the moment. I’m perfectly happy with the stand mixer that I did get!

That hasn’t stopped me from looking for rings for Justin, though- particularly tungsten bands. They’re so inexpensive that we could afford them right now if someone {ahem, Justin…} decided to take that plunge. I’ve been looking at both tungsten engagement bands and tungsten wedding bands at Mens Tungsten Online and we could even afford to get BOTH, right now!

But even more fun is the window shopping I’m doing for myself. I just built this beautiful engagement ring- it’s exactly what I want. Classic. Simple. Small. Beautiful.

My New Indoor Holiday Decor: The Reveal! #Searsrealcheer #CBias

So last week I told you about my trip to Sears for indoor Holiday decor and told you that this week I’d show you what I got & the results, so here you go! {Pardon the messy house- I have a 2 year old. ‘Nuff said.}

This Santa sits at our entryway, greeting everyone!

We have Holiday themed towels in every bathroom, and I’m even using one as a dish towel.



This huge candle makes the whole downstairs smell like Cranberry- my favorite Winter smell!

I added lights on the banister- this is easily Shane’s favorite decoration {besides the tree}!

A snowglobe- far away from toddler hands but still where it can be enjoyed all the time.

I got a few other things as well- apparently I had a reindeer theme going on!

-A few pot holders {bottom left}
-4 Holiday Sippy Cups {bottom right}
-SEVERAL more hand towels- about 10 in all {not pictured}
-&Something secret that I can’t tell you because it’s a gift for someone who reads this!

All in all, I spent only $100 on everything! I bought everything with three weeks left until Christmas still, yet everything was already on a huge sale- and the prices had been very good to begin with, so the sales were even better!

Can you imagine what the sale prices are going to look like next week, when Christmas is over? I’m planning on a trip there to swoop up some goodies for next year!

Holiday Gift Guide Spotlight: Babiators!
